Easy Yogurt Cheese with Edible Flowers and chives

Yogurt cheese is really easy to make and it’s a healthy way to indulge your cravings. Adding  garden fresh edible flowers and chives turns this cheese into a flavourful and stunning masterpiece. All you need is high fat yogurt, some chives, flowers and a pinch of salt. Bundle it up and let the magic happen.

The finished cheese has a lovely texture. It falls between a cream and a goat cheese. The flavour is bright, zesty and fresh. The flowers add a subtle hint of complexity but the cheese does not taste “flowery” at all

Chop up some edible flower petals such as: Nasturtiums, lilacs, rose, fireweed and clover. Be sure to remove the stems and green parts of the flower as they often taste bitter. Chop up some chives or green onion. I used roughly 1/2 cup of lilac petals and 1/4 cup of green onions.

Add the following to a bowl and stir to combine:

  • The flower petal & onion mixture
  • One cup of full fat plain yogurt
  • A few pinches of salt (about 1/8th tsp)

Place a  double thickness square of cheese cloth on your counter top. Sprinkle some whole flower petals on the surface of the cheese cloth.  Pour the yougurt mixture on the centre of the square. Gather up the corners and sides of the cheese cloth and secure with twine to form a tight bundle.

Suspend this ball over a bowl and let the liquid drip out  for 24 hours. The whey (liquid) that drains out of the yogurt is a great source of protein and calcium. You can use it in smoothies or add it to drinks or porridge.

When done, gently remove the cheese cloth and enjoy.
